Gluten-Free Banana Chocolate Chip Cookies

This recipe is as old as the hills, but I love it so I made it with gluten-free flour and it worked. I hope you enjoy it as much as my family does.

Ingredients   cocolate chip cookies

2 ¼ c gluten-free all-purpose flour

2 teaspoons baking powder

½ teaspoon salt

¼ c baking soda

1 c granulated sugar

2/3 c butter or margarine – softened

2 eggs

1teaspoon vanilla

6 oz chocolate chips

1 c mashed ripe bananas

1 teaspoon banana extract


Preheat oven to 400 degrees F

Sift together first 4 ingredients.

Mix next 4 ingredients together

Add dry ingredients, blend well

Stir in banana extract, bananas, and chocolate chips.

Drop by teaspoonfuls onto greased cookie sheet. Allow room for the dough to expand.

Bake for 12- 15 minutes. Let cool them remove from cookie sheet.

I met my match when Faith Daniels burst into my private BDSM club, wearing a wedding dress. Did I mention she was a cop?

What do you do for a living?

I’m an investor, including some, well, lets just call them private holdings.

What was your childhood like? Happy? Moved around a lot?

I was very happy. My parents were incredible people who lived…differently. Some people would have called it weird. I called it normal.

What did you think of (the love interest) when you first met?

What. The. Fuck??

Do you believe in love at first sight?

I do now. Granted, in our case, that first site was a doozy.

What do you like most about him/ her?

How predictable she is at being unpredictable. I think I spent the first half of our relationship protecting my nuts. The problem is the other half of the time.

Describe her in one word.


What is your most embarrassing moment?

I think that’s a question for Faith. Knowing her, she’s keeping a list.

What is your favorite food?

Can I be a perv here? No? Not a food group? Okay, then peaches. Yeah, peaches.

Ashlyn’s identified her theme as involving characters who reinvent themselves. It’s no wonder, since she has reinvented herself numerous times. Finally content with her life, she lives in beautiful New Hampshire with her true-life hero husband and a spoiled brat cat.

Gluten-Free Asian Lettuce Wraps

Asian Lettuce Wraps.

My daughter gave me this recipe, and I love it. I serve it as lettuce wraps, but I also serve it with rice as a main meal.Asian lettuce wraps


8 oz lean ground turkey or chicken

3 cups bagged coleslaw mix

5 green onions, sliced

1teaspoon minced ginger (fresh or jar)

2 Tablespoons soy sauce (I used sodium reduced)

½ cups chopped water chestnuts.

1 Tablespoon hoisin sauce

Pepper to taste

10 – 14 iceberg or butter lettuce leaves


Spray large skillet with cooking spray. Crumble meat and cook for 10 minutes at medium heat until cooked thoroughly. Place the coleslaw and green onions in a microwave-safe bowl, cover and cook on high for 3 minutes.

In a small bowl, combine ginger and soy sauce and add to meat mixture. Cook for 3 minutes and remove from heat. Stir in slaw mix, water chestnuts, hoisin sauce and pepper.

Fill each lettuce leaf with 3 tablespoons of mixture and fold up the bottom then the sides.

Or serve on plate with salad and rice.

Gluten-Free Zucchini Blueberry Cake

Gluten-free Zucchini Blueberry Cake

At this time of the year, I love to put zucchini in everything. Here is a great cake recipe.


1-cup vegetable oil

3 teaspoons vanilla extract

2 ¼ cups granulated sugar

2 cups finely shredded and drained zucchini

3 cups gluten-free flour

1-teaspoon salt

1-teaspoon baking powder

¼-teaspoon baking soda

1-pint fresh blueberries.


Preheat oven to 350 degrees F. prepare two 8 inch round cake pans.

Grade a large zucchini (two small zucchini) and [lace in a clean dishtowel. Squeeze until most of the liquid comes out Make sure it is 2 cups after draining.

In a large bowl using a hand mixer to beat together the eggs, oil, vanilla, and sugar. Fold in the zucchini.

Slowly add the flour, salt, baking powder, and baking soda. Gently fold in the blueberries. Divide batter evenly between prepared cake pans.

Bake 35 – 40 minutes or until knife inserted comes out clean. Cool in pans for 20 minutes then turn out onto wire racks to cool completely.

Can be iced if desired.

Welcome to my blog today Tena. Tell us a little about yourself.

I grew up a lonely only child in a single parent home.  My imaginary friends were my most prized possessions, if you can call them possessions. LOL.  I vowed to marry a man with lots of siblings (always thought it would be great to have lots of brothers and sisters), alas, as it turns out my husband and the love of my life too is an only child. To take that one step further, my best friend in the world is also an only child (she married a man with six siblings). But at least we all understand each other and believe me being an only child is not anywhere near as wonderful as portrayed.

I began writing as soon as I could read and write.  Fun little stories and stories for my friend’s birthdays, etc.  It was a way to express my over active imagination without getting into trouble. Then life intervened and writing took a back seat for many years.  I was down sized from my job of fourteen years and decided with my hubby’s support the time was now. I had a few unfinished and finished manuscripts. Took them out, dusted them off, edited and polished them and sent one off.  Right time, right place and The Wild Rose Press contracted my first book.  Now, I have four contracted books and am living the dream.  LOL  Which sometimes turns into a nightmare when the characters don’t cooperate, a deadline looms and life careens out of control.  Ever have that happen? Over all I love being a writer.  Making things up for a living, it doesn’t get much better than that. LOL

Is there a message in your novel that you want readers to grasp?

Maybe, never thought about it.  Wild life conservation is a topic near and dear to my heart, so I guess that came out in this book. Also a theme runs through all of my book, “Remember the magic to happily ever after.”

What authors have most influenced you?

Why?  Nora Roberts because she can spin a great tale. I like her paranormal tales more than her contemporary romances, and I truly enjoyed The Witness, a bit different for Nora.  More recently Molly Harper, I love her humor, paranormal creatures and entertaining prose. I laugh out loud at her books. Which leads to people looking at me like I’ve lost my mind.  Well okay, that’s not the only reason people look at me like that.

What are you reading now?

Nancy Atherton’s, Aunt Dimity  and The Buried Treasure; and The second in Nora Roberts  Guardians Trilogy, Bay of Sighs. And I’m always reading books from my fellow authors at The Wild Rose Press.

“Pepper McKay, call me Pepper.” Extending her hand towards him, she met his gaze. His large aquamarine eyes were mesmerizing, set above the high cheekbones, full lips and a butterscotch five o’clock shadow. She gave her head a shake. “Wait. You built an aviary?”

He shook her hand and smiled, shoving his hands in the pockets of his jeans and rocking back on his heels.
